Avocado Sans Toast

Avocado Sans Toast

  • 1 pomelo or pink grapefruit
  • Handful kumquats, scrubbed and thinly sliced
  • 2 perfectly ripe avocados
  • Handful bitter baby greens
  • Olive oil
  • Sea salt
  • Freshly ground black pepper

Using sharp knife cut away peel of pomelo and supreme fruit.  Cut each supreme into small pieces and place fruit and juice in a bowl.   Add kumquats and toss to combine.  Slice open avocados and divide flesh between serving plates.  Spoon citrus over avocado.  Scatter over a few greens.  Drizzle each serving with olive oil and season well with salt and pepper.
