Avocado Sans Toast
- 1 pomelo or pink grapefruit
- Handful kumquats, scrubbed and thinly sliced
- 2 perfectly ripe avocados
- Handful bitter baby greens
- Olive oil
- Sea salt
- Freshly ground black pepper
Using sharp knife cut away peel of pomelo and supreme fruit. Cut each supreme into small pieces and place fruit and juice in a bowl. Add kumquats and toss to combine. Slice open avocados and divide flesh between serving plates. Spoon citrus over avocado. Scatter over a few greens. Drizzle each serving with olive oil and season well with salt and pepper.
