- 1 cup light flavored olive oil
- 1 fresh egg yolk, room temperature
- sea salt
Slowly drip oil into egg yolk, whisking gently to form a good emulsion. Work until oil is fully incorporated. Season with salt. Serve with oven baked fries below.
Oven Baked Fries
- 3 large baking potatoes
- 2 cloves garlic, thinly sliced
- sprig of fresh rosemary
- olive oil
- flakey sea salt
Preheat Oven to 450 degrees F. Cut potatoes into wedges (we like them on the thiner side). Toss potatoes, garlic and rosemary (broken into pieces/leaves) with a healthy dosing of oil oil so they are nicely coated. Place on baking sheet taking care to not overlap wedges. Bake for 45 minutes in preheated oven.
