Yellow Snow Peas with Arugula Flowers and Feta
- 2 tablespoons red wine vinegar
- 2 teaspoons honey
- 6 tablespoons Extra Virgin olive oil
- 1 small shallot, thinly sliced
- Sea Salt
- Freshly ground black pepper
- Several big greedy handfuls of yellow snow peas, trimmed
- 1/2 that amount of flowering arugula, tough stems removed
- 3/4 cup feta cheese, or more to taste
Whisk together vinegar, honey and olive oil. Add shallot and season well with salt and pepper. Let stand about 1 hour before using to allow shallot to soften. Blanch snow peas in boiling salted water until just tender but still crunchy - a minute or two. Drain, shock to stop the cooking and pat dry with a paper bowl. Combine peas, greens and feta in a big serving bowl, season well with salt and pepper (not too much pepper as arugula has its own heat) and toss with salad dressing just before serving.
