Vanilla Bean Waffles
- 2 cups all purpose flour
- 2 tablespoons baking powder
- 6 tablespoons sugar
- Pinch salt
- 1 1/2 cups milk, plus more if needed
- 2 eggs, lightly beaten
- 1 vanilla bean, split and seeds scraped
- 8 tablespoons butter, melted
Whisk together flour, baking powder, sugar and salt in a large mixing bowl. Use a spoon to create a well in center. Combine milk, eggs, vanilla bean seeds and butter. Whisk until smooth. Pour mixture into center well, stirring as you go to prevent lumps from forming. Thin with more milk if needed - batter should just mound in spoon. Cook according to waffle maker instructions - golden but soft seems best. Waffles can be made in advance - frozen and then toasted as needed.
