Horchata
- 1 cup uncooked white rice
- 1 cinnamon stick, broken into small pieces, plus more for serving
- 1/2 cup sugar, or more to taste - experiment with date and coconut sugar too
- Fresh ground cinnamon or or nutmeg, for serving
Combine rice, cinnamon sticks and 4 cups cold water. Pulse until coarsely ground. Transfer to a large bowl. Stir in another 4 cups cold water and let stand for 3 hours at room temperature. Strain mixture through a fine cheese clothe lined sieve into a pitcher. Squeeze on solids to extract as much milky liquid as possible. Measure out one cup liquid and bring to a simmer. Stir in sugar and heat just to dissolve. Return sweetened liquid to pitcher and chill. Stir well and sprinkle with fresh nutmeg or cinnamon just before serving over ice. Stick of cinnamon is nice too.
