Panna Cotta
- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
- 2 1/2 cups heavy cream
- 1/2 cup whole milk
- 1//3 cups sugar
- 2 teaspoons pure vanilla extract
- Poached fruit of choice, for serving
Combine gelatin in a small saucepan and let stand about 5 minutes to soften. Combine heavy cream, milk and sugar in a large saucepan and scald over medium heat. Melt gelatin over very low heat and whisk into hot cream, Stir in vanilla. Divide mixture between about 6 small ramekins. Let cool and then transfer to refrigerator to chill, about 4 hours. Serve with poached fruit.
