Chamomile Sun Tea
- 1 bunch fresh chamomile, stems removed, reserve a few sprigs for serving
- 1 cup sugar
- ice for serving
Rinse chamomile flowers. Place half the flowers in a large jar and fill with 10 - 12 cups fresh cold water. Let steep in bright direct sunshine for several hours. Combine sugar and two cups water in a small saucepan. Set over high heat and bring to a boil. Reduce heat and simmer just until sugar dissolves. Remove from heat, stir in remaining chamomile flowers and let steep about one hour. Strain, discarding flowers, and cool completely. Strain sun tea and sweeten to taste with chamomile infused syrup. Serve over ice with fresh chamomile flowers and lemon or mint if desired.
