Sugar Snaps with Sesame and Ginger
- 6 cups sugar snap peas, stem end trimmed
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1 inch piece fresh ginger, grated
- 2 tablespoons peanut oil
- 1 tablespoon sesame seeds, toasted
Bring a large pot of salted water to a boil. Add sugar snaps and blanch until just tender. Drain, rinse under cold water and pat dry. Whisk together soy sauce, sesame oil, sugar and ginger. Heat peanut oil in a small skillet and pour hot oil into soy mixture. Drizzle dressing over sugar snaps and sprinkle with sesame seeds.
