Spaghetti with Chopped Tomato Sauce
- 5 pounds ripe tomatoes, mixed varieties. cored and roughly chopped
- 2 cloves garlic, or more according to taste
- 6 tablespoons olive oil, plus more for serving
- 1 tablespoon red wine vinegar
- Several sprigs fresh oregano
- 1 teaspoon sea salt
- Freshly ground black pepper
- 1 pound Spaghetti
Combine tomatoes and garlic in a large bowl. Drizzle with olive oil. Season with vinegar, oregano, salt and pepper. Let stand for about 30 minutes so that tomatoes release juice and flavors meld. Fill a large pot with water. Set over high heat and bring to a boil. Salt and add pasta. Cook according to package instructions. Drain pasta and toss immediately with chopped tomatoes. Adjust seasoning and drizzle with additional olive oil if desired.
