Dried Fava Bean Hummus
- 1/2 pound dried fava beans (shelled)
- 1 cup good quality tahini paste
- 4 tablespoons freshly squeezed lemon juice
- 4 cloves garlic, minced
- Sea salt, to taste
- 6 tablespoons ice water

- Olive oil, for drizzling
- Freshly ground black pepper
- Fresh cilantro, for serving
- Trimmed and sliced fresh vegetables such as carrots and radishes for serving
- Crackers, for serving
Place fava beans in a large cooking pot and cover with several inches of cold water. Let soak overnight. Drain beans, rinse and return to pot. Set over high heat and bring to a boil. Reduce heat and simmer until beans are very tender but not mushy, about 25 minutes. Drain beans and transfer to bowl of food processor. Process to form a smooth thick paste. With machine running, add tahini, lemon juice, garlic about 11/2 teaspoons salt. Process a moment or two. Drizzle in water and process until hummus is velvety. Adjust seasoning to taste with more lemon and salt. Transfer hummus to a serving bowl, drizzle with olive oil and sprinkle with black pepper. Serve with cilantro, vegetables and crackers.
