Skate with Brown Butter, Capers and Lemon
- 4 small skate wings, about 1 pound
- Sea salt
- Freshly ground black pepper
- 6 tablespoons unsalted butter
- Juice of 2 lemons
- 2 tablespoons capers
- Lemon slices, for serving
Rinse skate wings under cold running water. Pat dry with paper towel. Season well with salt and pepper. Melt butter in a large heavy bottomed skillet over a medium flame. Allow butter to foam and then start to turn brown. It should smell sweet and nutty. When butter has browned to a nice caramel color, add skate wings. Cook until golden - Plum likes the tips crisps as can be - about 3 minutes. Use a fish spatula to turn wings over and cook another 3 minutes - depending on thickness of flesh. Add lemon juice and capers and let juices bubble up and just start to cook down. Serve immediately with a few slices of lemon.
