Grilled Steak and Ramp Butter Sandwic
Real recipe here is ramp butter - steak was simply seasoned well with salt and pepper, grilled to a gorgeous medium rare over hot coals and served with a handful of pea shoots. Find yourself some nice crusty bread- baguette is always nice.
- 5 ramps, rinsed and trimmed
- 12 tablespoons unsalted butter, room temperature
- 1/2 teaspoon Maldon sea salt
- Pinch freshly ground black pepper
Whiz together ramps and butter in the bowl of a food processor, using a rubber spatula to scrap down sides. Season well with salt and pepper and whiz again. Transfer flavored butter to a clean storage dish, cover and keep refrigerated until needed.
