Goat Cheese, Cucumbers and Mint on Rye.
Spread a nice amount of fresh goat cheese on a slice of rye bread (you can also use cream cheese if goat falls into the "freaky" category). Arrange cucumber slices over cheese and toss on a few mint leaves. Season with salt and pepper and drizzle with enough olive oil to keep bread from drying out. Top with another slice of bread, grab some grapes and good chocolate and you are out the door.
